Wrapped in the vineyards between villages and castles: the thousand perceptions of Chianti Classico and all the experiences to live it

We travel in the portion of Tuscany between cities of Siena, Florence . This is an example of the fruitful union of the classical Greek “fusis”and”sofos” of nature and logic. Their marriage has given rise to a sort of divinity: the nymph of the Chianti, the soul of this land. Brambles and grape vines make up her hair, the wind is her breath, sparkling streams reflect her eyes, wine flows in her veins and rolling hills are the contours of her body. Her smile shines like the sun, and she is as proud as a castle and gentle as an abbey. She is simultaneously earthy and ascetic, older than time while elegant in her youthfulness. She is endowed with mysterious magic and loves to be on display, to express herself, to welcome visitors and be an object of desire. She slowly reveals herself to those who have the patience and courage to discover her innermost essence, the union of nature and logic. Now it is becoming clearer why the exploration we are embarking on is one of imaginary lands: the home of the nymph could never be as it is if it weren’t for the intervention of man and their ability to perpetuate and comprehend this intervention. This means that the identity of the Chianti resides primarily in a conscious effort to generate harmony between the forces of nature and the intellect of man. Four towns that best describe the area's distinctiveness Greve, Radda, Castellina , Gaiole . But also Castelnuovo Berardenga, Panzano, Impruneta and the small charming villages as Volpaia, San Sano , Vertine , Montefioralle , Casenuove di Ama , Lecchi are ready to show their charming treasure

A private full experience day of Chianti to discover the secrets and highlights of the food of this land: truffles, from hunting to cooking with dinner: tonight "at home cooking with a Som" .. this means that we cannot forget the wine !! Then our day will also include the perfect wine bought during the day way, after our wine tour at a boutique winery
Here, immersed in a slow time, we will meet, early in the morning, in a designated place with the expert truffle hunter and his inseparable, friendly hound dog: Syrano and our experience will begin !! While we will walk in the woods exploring the truffle area .. without knowing if we will find it : hunting is authentic !! ... we will discuss and learn that waiting is not wasting time .. but understanding nature .. and smells .. unfortunately not those of the truffle that only the dog can warn .. until the dog stops .. then we would know which "treasure" has been found for us .. so: Good hunting !!! After about 1 hour and a half harvesting our golden food we will continue:  hunting for wine in the small timeless villages! Only after our wine tour and tasting, in a boutique cellar, can we go home and, with all our treasure, wine and truffle, immediately in the kitchen: we have to prepare our dinner which will also be an introduction to the "tasting rules"!!! [....]

CHIANTI: SANGIOVESE MUSTS FROM "PURE WINE" TO MEDIEVAL MUSTS AND BALSAMIC

  

A journey to harsh lands that the Romans preferred to skip ... the only liquid that flowed was Sangiovese and with the ferrous terracotta of this clay ... transport was a mission that ... we would like to taste with our Foodies pit stops

Today we will enter the economic identity of this land blessed by the Chianti Classico, knowing that the Romans ignored it, or rather crossed only to connect the Roman Florence to the Roman Siena. Ignored land like the vines that, planted by the Etruscans, directly from the one that it was Enotria, as the DNA confirms for the links with the Calabrian and Sicilian vines, were trivialized until the Middle Ages when Monks, who understood the fermentations, and Nobles, who understood its economic value, made it absolute wealth that today seduces. And wanting to retrace the cycles and recycles of history with the palate, we will begin with "Frank" wines,  because they were obtained from the few vines, of the medieval clone of unfrafted SerGioveto that   resisted phylloxera,  to compare those "Frank" wines because, aged in amphorae have uncontaminated the varietal aromas . And without skipping to thank the advocates, of this all-medieval development, we will stop to a local producer that  continue to bring that Middle Ages to life made of cooked musts because badly fermented, a small producer of Medieval wine and Balsamic vinegar, that we will taste in our light lunch as furter Foddies pit stop. We will end the journey in Florence with a happy hour where, from the Romans to the contemporary world, all history returns its stratification in this last gourmet  Foodies pit stop [....]

 


CHIANTI NOBLE WINE FAMILIES REDISCOVERS NATIVE VINS AND LIFESTYLE

  

Today an experience with strong flavors thinking of entering the history of Dante's Medievo! Of course we will not meet him, but to know that "Ser Capponi" will host us in his Chianti lands to let us discover those "holy" wines that "marry" organic goat cheeses

Today we will enter into the feeling of the history of the Middle Ages through the incredible flavors of goats, raw milk that graze the estates of the "Conte Capponi" Villa, and wines from native vines that have been restored to history and that have intertwined with the vines of the Sangiovese, until you get to discover the Vin Santo, which still rests in the undergrounds of the Castles, that wine that first shocked those monks to whom it was offered and which, due to the particular process of production and drying of the grapes, brought back similar to those nectars Hellenic originating from the Turkish Xhantos! And only after our 3 Foodies pit stop included light lunch and wine tastings  dedicated to natives, goat cheeses and Vin Santo ... it will be worth the stop to admire the hidden cenacle of Ghirlandaio kept in the refrectory of one of those Abbeys [...]


CHIANTI: FROM THE ETRUSCAN ORIGIN OF THE SANGIOVESE UP TO THE AMPHORES

  

A journey made of historical slowness that follows the DNA of Sangiovese and Olives which together with the tradition of its farms have evolved together with the clays and men of this land starting from the Etruscans to whom we will return to finish at Cena as the last of our foodies pit stop

Today we will enter the history of the whole Chianti from Florence to Siena where the 4 Foodies pit stop with wine tasting in the various cellars accompanied by a Foodies pit stop with light lunch dedicated to the tasting of EVO olive oil will make us retrace civilization among vins of native grapes, such as Malvasia Nera, related to the clones of that Sangiovese planted by the Etruscans, passing to the noble families winery who started its medieval development up to the cellars that reproduced those Chianti with white grapes in blends up to those small producers who have recovered the "married vineyards" , grown in symbiosis with other trees .. and more learning about the amphorae that from the first use as transportation for wine, even before the Roman era, became an element of conservation of wine and oil .. until noday that its are a fermentation tool as we will reveal cellar after cellar .. .and where would we end up for dinner? In a timeless place .. under the famous Piazza del Campo of Siena... in a truly suggestive dinner surrounded by the Etruscan mysteries that rest here .. we would be in a former Etruscan tompa !! [...]

Travelling along the Chianti wine region , in the North part, our eyes will be delighted by a landscape of beautiful hills “inhabited” by typical olive groves and lines of vineyards that are “interrupted by small hamlets.. that we cannot skip !! The first will be Montefioralle where we will walk around the ring of a narrow road surround the medieval Castle from immaginate the hierarchies through the buildings in the Meddle ages , then we will move to Passignano to visit the amazing Abbey where admire the beautiful church decorations and if we are lucky to meet one of the monks we wil ask to visit to the Medieval part of the Castle, the private part, where still live that for us will open the door of the historical kitchen for ending "to touch" of the incredible frescos of the Ghirlandaio in his last supper !! . Then continuing our day we will visit one of the incredible Renaissance villa that are continuing the wine business from the Middle Ages !!! Here a nice guided wine tour including the historical cellars and a typical summer lunch with wine tasting [...]

Today we will enter the flavors of this portion of Chianti which, more than others, shows its stratification: from the Etruscans of the Tombs to the Medievo dei Castelli, up to the contemporaneity of the "artists" who, in the village of Castellina, express themselves on the canvases and in the contryside, on the excellent farms .. in the barrels! ..and it is not only wine but also balsamic vinegar !! This is the experience that awaits us !!

Today we will enter the flavors of the history of Medievo and will be strong perceptions when we discover, in the first stop in Greve, through the tasting of incredible flavors of goats cheese, to trample the same lands of the Capponi family .. one member of the same dinasty that discussed with Dante ..and then continuing to Florence with the historical walk .. ending to sit, for our aperitif, in front of the same frescoes that Dante and Ser Capponi saw, in the Middle Ages, make !!! Of course we will not meet Dante .. but not even the descendant "Ser Capponi" did it .. and he too, like us, to know the events of his family .. will have to "listen" to the stories of the buildings, alleys and walls. and if he will do it in the rooms of his palaces with friends .. we would do it with a historical walk that will take us ..not into the living room of the Capponi house, but among the frescoes that Dante and Ser Capponi have seen .. changes in the furnishings and food of our aperitif, which will be the end of our experience, will bring us back to the present .. It remains common emotion: 600-year are the same long distance that only the experience of today makes more shorter with :  the flavors of goats cheeses , raw milk that we will taste, after the guided tour, and the buildings crystallized from history, that we will visit,  like the frescoes brought back to life that we can touch for our aperitif [...]

Today a 5 senses journey to discover, a different face of the Chianti region in search of the odor molecules known and unsuspected !!! In the woods of the nature reserve, in Lorenzo's distillery with his "aromas sniffing" ... up to the palate with our foodies pit stop

Today we would be right in the Sant'Agnese reserve and it will be a real hunt for fragrant molecules and, to be sure of being able to recognize every essence, we need to prepare yourself: and our guided trekking, in this oasis, which is one of the most beautiful nature reserves of Chianti with the higher biodiversity of plants and vineyards, will be the hunting ground to trace their aromas! If parish churches and castles have told us about history, the view has been enriched with "natural essences" made of cypresses, lavenders and ... vineyards that will make us perceive the desire to immerse ourselves and savor it !! And we will do it by letting ourselves be intoxicated by Lorenzo, when he will welcome us in his unique, as unexpected, distillery of essential oils, and by Silvano where they will satisfy our palate with our foodies pit stop where actors it will be the Balsamic vinegar and the unusual "wine "... the one obtained from the recipe of the monks of Sant'Agnese! [...]

It will be the infinite beauty of the vineyards and villages above them to prepare our senses well in order to fully experience the other sensations, directly in the wine cellars as in our foodies pit stops for tasting wines and local specialties with light lunch

Crossing the amazing Chianti view we will start from Radda, the medieval village of the Chianti league, where you will take your e-bike and after a cappuccino and a brief briefing you will pedal very easy, effortlessly, in one of the best sceneries of Tuscany. After a few minutes on the regular road that overlook the Sangiovese vineyards, you will immerse yourself in the streets where the smell of the woods and vineyards will be the first sensation to prepare your senses to have the first wine tour .. that it will be a guided tour of the underground historical cellars for ending with a sensory tasting to learn to hunt the aromas of Chianti Classico .. Continuing along the wild road we will arrive in the charming village of Volpaia and after a delicious stop for a light lunch with Paola's mom cooking, we will discover what is considered a castle in Tuscany with a delightful walk in what is now a wine estate that will make us taste its wines before catching our the third winery, considered one of the best expressions of the modern winery and take a guided tour and tasting before go back to Radda [...]

It will be the dirt roads between the vineyards and enchanting villages of Chianti where we will have fun with our e-bikes to live with all senses, the other sensations that we would discover on the palate in our foodies pit stops.

Transferd from/to the Chianti vineyards ready to start the fun full day experience by E-bike: foodies' guided tour starting from Radda and after a brief briefing you will pedal very easy, effortlessly, in one of the best sceneries of Tuscany. After a few minutes on the regular road that overlook the Sangiovese vineyards, you will immerse yourself in the streets where the smell of the woods and vineyards will be the first sensation to prepare your senses to have your foodies stops!! .. Arrived to Volpaia the very amazing hamlet we will visit and learn what was considered Castle in Tuscany and we will stop to Paola to have the best Tiramisu’ made by her mom , then continuing through the wild road , that it was a part of one famous cycle rise , we will reach a sheep cheese maker and there we will have a guided tasting of the amazing cheeses before arriving to Panzano to stop in one of the historical butcher for eating a “Tuscan Hamburger” with the best beef t-bone steak meat!! Then returning to Radda along the regular road to admire one of the best scenerary over the vineyards called “gold valley” for the special colours done under the sun !!! [...]

With a “Ape Piaggio”  as Kenneth Branagh alongside the slow curves you discover all the little known landscapes, beautifully designed Medieval hamlet , villas and castles scattered throughout the territory. On hills of vineyards and olive groves, made even more beautiful by historic villas and country houses: this are the magic "Chianti". A journey of the past in the chianti of the disputed castles for an unusual and fun to discover that slow time is not boring waiting, on the contrary it is a lively lifestyle .. and we will discover it with our hands and with our taste .. after being been to Castle .. but not in a carriage..by grain horsetrack!

Certainly along these roads to arrive we would have understood that here the times follow nature and its rhythm since the Middle Ages and we will have felt to deep into! And we will do it!! .. but only after having fun by putting our hands in the dough to enter as protagonists in the lifestyle of these lands to end up tasting all the flavors that a simple fresh pasta will express us! It will be an artisan fresh pasta workshop that will reveal all the secrets and differences of the spaghetti as we try to make them and taste all the authenticity of our first foodies pit stop..
