Hills sculpted by man that, in the belly, welcome fermenting bubbles, incredible aromatic white truffles and intense cheeses and, in the hills, rivulets of Nebbiolo red to flow, to lap villages and castles, to challenge the exotic chocolate ... magical lands !!

Langhe and Monferrato: “Hills on which the vineyards thrive, scattered with castles, and with a feudal aspect. They come towards you sweetly, but the impression of sweetness lasts a minute. Looking at them well, one can see, as of transparency, their white, eroded, landslide background. Their attractiveness increases as the hard, violent, but concealed by a veil of superficial sweetness becomes more precise ". These beautiful words of his, taken from Travel in Italy by Guido Piovene, Milan Mondatori, 1957, perfectly outline the salient characters, the peculiarity of the Langa hills. Beautiful vineyards, beautiful to look at not only for their harmonious geometries, but today even more important for an increasingly rooted and effective agricultural economy. The ancient villages perched on the tops of the bricchi, each with its ruin, you want it to be a tower, castle, walls, still remind us of the ancient feudal past of these lands. Hard and harsh lands to work have given the vivid red "blood" that in Monferrato and in the Langhe is wine, Nebbiolo, which fades into bubbles of Moscato in the Asti area, which bathes and ages splendid cheeses and waters intoxicating truffles .. to finish to challenge the chocolate in a duel !! The wine, produced and marketed already by the ancient Romans, brought back into vogue by Carlo Alberto in the Royal estate of Pollenzo also thanks to the experiments conducted on the Grinzane estate by Count Camillo Benso di Cavour, soon became an important reference point in the economy of Langa and Roero. Wine and effort therefore, that of man who with infinite patience, with great meticulousness has been able to shape the sides and steep slopes of these hills, transforming them into land suitable for viticulture. The fine Langa and Roero wines, carefully preserved in ancient cellars, often dug in the bowels of the earth to better preserve aromas, structure and perfumes, are exported every day all over the world and tell the magic of the hills where they are produced, the Langhe .

A journey into the magic of the spicy Langhe to taste the evolution of the style of drinking from the Romans to today through the flavored wines that have become Piedmontese identities: Roman Archaeological Wine, Vermouth and Barolo Chinato for our foodies pit stops 

Today we will be guided by the magic of spices ... pepper in the first place ... and it will be a surprise because what you will perceive in today's wines will not be given by the American wood barrel ! It will be a journey through time from the Romans to today to taste wines born to join spices by flavoring. During our day we will discover its different taste, as the original making, as well as the historical evolution of the drinking style of this typical Piedmontese tradition  that together with the villages of Nieve, Barolo and Canelli will satisfy us all senses ... and if we wanted to say wow we would haven't to skip Silvio Bessone's chocolate, as pairing !! [....]

 


 BAROLO, BARBARESCO AND ROERO: NEBBIOLO CHALLENGES COCOA AROMATIC NOTES

A journey of the senses: guided among the aromatic notes of Nebbioli's wines between Roero, Barolo and Barbaresco to taste the sights and its aromas to challenge the purest cocoa with our 4 foodies pit stops

Today will be a whirlwind of sensations that will satisfy all the senses from the sight to the palate on a journey to discover the different notes of Nebbiolo between Barolo, Barbaresco and .. Roero. The best expressions of excellence will be the 3 wineries that will welcome us to make us appreciate every diversity and aromatic nuance to imagine the combination with the tasting menu, "contaminated with cocoa" that the master ... pastry chef .. researcher and chef .. Silvio Bessone will have prepared us waiting for us for gourmet dinner in his "aromatic kingdom" ... and it will be a challenge with unforgettable notes ... and I assure you it will not be sweet .. but definitely elitist !!!! [.....]

  LANGHE: LANDS OF INTENSE AROMAS SINCE THE ROMANS TO TODAY

A journey on the path of aromas in the culture of the Langhe from the Romans to the Chocolate of Bessone passing through the history of Cinchona wines and distillers with with our 5 foodies pit stops

Today we will start with chocolate, our first Foodies pit stop, to begin the magic of spices that flavor wines .. since the Romans! From Cuneo to Asti passing through Alba, Barolo and Canelli retracing recipes made by the apothecaries of all times we will taste, in 3 Foodies pit stops, the Roman archaeological wines to move on to the Barolo Chinato and Barbera Chinato, and finish with the spirits to discover from the aperitif to the digestive, directly in the places of production, which of the alcohols will perfectly "marry" Silvio Bessone's symphony of chocolate aromas ... it will be a happy day !!!! [....]

 ALBA: UNDERGROUND THE SECRET SINCE ROMANS FOR WINE CULTURE

A journey in the Romans way starting from discovering the underground Alba Pompilia to reveal the civilization of drinking in these lands where aromatic grapes, flavored wines, and truffles, remain the identity until to declaim cathedrals the winecellars in Canelli!
Today we will start from the small museum of Simone, the archaeologist producer of Roman archaeological wines, to approach the civilization of drinking and living of Langhe starting from the Romans and exaclty tasting the original recepy of their wines: wine tasting of the two Roman wines will be our first foodies pit stop to continue the discovery of underground Alba, Alba Pompeia, and continue with the cathedrals of Canelli, the impressive underground cellars of Moscato d'Asti, the only sparkling wine whose base remains must .. and here we will do the 2nd Foodies pit stop for tasting. The journey will end in an historic winery for the guided tour and tasting of Barbera and Roero Arneis, the two wines that, together with the Truffle, have traced its identity since the Romans. And obviously our Foodies pit stop for light lunch will be dedicated to the Truffle !! [....]

 BARBARESCO: NATIVE WINES JOIN UNGRAFTED BAROLO AND BARBERA AS NATURAL TERROIR

  

A journey into the wine DNA of the Langhe to taste native and ungrafted grapes of Barolo, Barbaresco and Barbera that are the identity , together the cheeses, of this terroir redy to taste in our foodies pit stops 

Today we will be guided by the senses to enter the DNA of this land, retracing with the palate the thousand nuances of indigenous vines that have overcome phylloxera remaining "francs" in their strains, and it will be a comparison of Barbere, Baroli and Barareschi in the 3 cellars of excellence that we will visit to reveal all the aromatic notes that go to "marry" those cheeses that trace the tradition here since the ancient Roman Pollentia and that we will try to Bra, the cheese town, to understand with  an additional Foodies pit stop with tasting... after a stroll in what was once a Roman amphitheater ??? ..if we will be in time! While we would certainly be forced to give up the ungrafted Dolcetto  .... for this time !!! [....]

 


  CUNEO: FERMENTATION IS THE SECRET FOR WINE, CHEESE AND CHOCOLATE

  

A journey to discover the secrets of quality through the fermentation of grapes as well as milk and cocoa directly from the producers who, with the wise application of science and the tradional making, enhance the aromatic notes of this territory in its genuine identity 

Today we would discover how much knowledge determines flavors and we would do it by following the fermentation in the cellar to discover the indigenous Dolcetto di Dogliani, and in the "kitchens" of the researcher and chef Silvio Bessone where we will start from the cheeses to finish with chocolate with a unique experience that it will make us understand the nature of the ingredients, its preparation and the recognition of defects up to its tasting .. a celebration on the palate .. and on the brain! Then we will move to a local winery for the wine tour dedicated to Dolcetto ... because was remained "sweet" ... and only now would we understand why ... as well as now we will appreciate the intensity of its fresh and dry notes with wine tasting [....]

BAROLO : CASTLES, VILLAGES FOR FOODIES

A trip like a king: between the Castles and the villages of the Langhe to taste the sights and its aromas with our foodies pit stops

Today we will satisfy ourselves by discovering the sweet life between the villages and the castles of the Langhe where from village to castle we will be excited by the view and by the tasting in our foodies pit stop! So the village of Novello, home of the white truffle, where the neo-Gothic castle will want to be accompanied by a happy hour at the truffle to enjoy the splendid view of the Langhe and the Tanaro valley. Then Cherasco, without forgetting a stop to taste the typical Cherasco kisses with chocolate and hazelnuts, and again Grinzane Cavour where we would be hosted for the guided visit the house of Count Camillo Benso di Cavour and to Barolo town where inevitable, to say to having tasted the Langhe style of live , a stop for taste Barolo wine in a small local producer, after seeing the village or the regional wine shop .. just to finish feeling like a king !!!!!!!!!!!! [....]

Today a journey into the thousand perceptions of the Langhe and Roero in a poetic journey into the medieval soul of the Castles that were royal residence and villages, which smell of intense flavors that we will taste in our Foodies pit stops with a tasting light lunch and a tasting happy hour

  Our historical journey in the poetry of the Langhe and Roero will start right from Alba with a walk among its medieval jewels protected by its red towers then the journey through the soul of the Roero will take us to stop among the most evocative villages such as Pocapaglia protected by its fortresses that, in their most impressive beauty, surround the town, scenically surmounted by its massive castle or Pollenzo, a hamlet of Bra, with its amphitheater, the ancient Pollentina .. but we will certainly conclude with the Royal Castle of Govone .. we could not conclude if we did not touch the Savoy residences that once hosted the summer parties organized by the nobles, in the Italian gardens and in the frescoed halls such as the Castle of Govone and its precious Chinese rooms as we cannot live without taste the Alba Truffle and , above all, do not taste the Toma cheese .. Murazzano, Bra, we are between Bra and Dogliane the cities of Cheese !! And we will do it with our Foodies pit stops of excellence with a light tasting lunch and with a "themed" happy hour .... truffle was born to marry dairy products .... and alcohol to clean the palates !! [....]

So from Racconigi, Savoy Castle, a true jewel of Baroque art, where the guided tour will show us from the vast kitchens, the royal chapel, and the apartments with furnishings, canvases, frescoes, to move on to the real Wine Castle where the exclusive cellar of the "King Nebbiolo grapes" will host us with a visit to the prestigious barrels up to our Vip Foodies pit stop with guided tasting. On the journey we will not miss to see castles and villages unmissable where to stop to appreciate the charm and scent of the villages like Saluzzo : The "Siena of the North" lying on the hills that open to the Bronda and Variata valleys, surrounded by vineyards and trees from fruit, with the background of the imposing Monviso, the King of stone, or Fassano and his Castle or Staffarda, with the beautiful abbey... Or even Dawn. How unmissble will be a second Foodies pit stop with light tasting lunch [....]
